It’s high time Stargayzing welcomed the great Lucille Ball to Eating With The Stars. In addition to her many other accomplishments, one suspects that Lucy was one actress who actually knew where the kitchen was in her Beverly Hills home. I found this old recipe for her chicken sauté (along with an actual picture of said dish) in an old magazine and it actually looks promising!
Lucille Ball’s Chicken Saute
Dust 1 cut-up chicken with mixture of flour, salt, pepper, and paprika. heat 1/4 up olive oil; fry chicken until golden. Cover skillet, reduce heat; cook until tender. Remove chicken.
Add to skillet 1 tbsp. chopped parsley, 1 cup sliced mushrooms, 1 small chopped onion, 6 artichoke hearts (cooked or canned), 1 chopped garlic clove. Cook until onion is tender. Add 1/4 cup white wine. Replace chicken in skillet.
Cover; simmer 10 minutes. this savory dish serves 2 t0 4.
